ELLIS COUNTY – It is beginning to look a lot like higher prices.

In fact, it seems the rising food prices around the country are creating a local crisis, which is called food insecurity.

The U.S. Bureau of Labor Statistics confirmed last month that inflation rose by 7% in 2021, and food prices rose by half a percent in December alone.

The article by senior author Sandi L. Pruitt, Ph.D., Associate Professor of Population and Data Sciences at UT Southwestern and co-leader of the study published in the journal Public Health Nutrition stated, “Texas is one of the most severely affected states during the pandemic, with about 26.8% of households estimated to be food insecure at some point since March 2020.”

United States Senator John Kennedy from Louisiana has been keeping a tally of the rising food prices on his Instagram and he has reported the following increases since early 2021:

Flour up 14.2%

Used Cars up 35.4%

Milk up 16%

Oranges up 12%

Beef up 15%

New cars up 12.1%

Electricity up 10.7%

Gasoline up 40.4%

Cereal up 6.4%

Meat up 12.7%

 

Kennedy began his calculation of the nation’s price increases on April 1, stating on his Instagram, “Inflation is the most pernicious tax out there.”
